Im so busy I just havent found the time to blog. Im in london at the moment, flying back this evening and working in amsterdam tomorrow.. I will definitely write some blogs this weekend so you will have a lot of reading to do the next couple of days!;)

Eggy Breakfast Wrap

Happpppppy Birthday to my boyfriend. A guy needs a good breakfast right? And because it was his birthday I promised to make him something good. Fresh orange juice, sliced banana, cup of tea, coffee and a yummy eggy breakfast wrap with avocado. Heaven on a plate!


Ingredients

gluten free or whole wheat wraps
avocado in wedges
3 eggs
fresh sliced fruit
salt and pepper
oil
cheese (I use hard old goat cheese)

The most important thing about this breakfast, are the eggs. I love scrambled eggs, I always use 1 egg and 2 whites a dash of soy milk, a bit of grated cheese salt and pepper. Always. But what does a scrambled egg make a good scrambled egg? Well, the thing is with scrambled eggs that you need a specific trick to make them fluffy, gooey, and yummy. For me this means whisking the eggs together with a fork, adding my cheese and spices, than the milk and just whisk until combined. Don't over mix. Than heat up a pan until incredibly hot, add your coconut or olive oil and pour in the eggs. Immediately turn the heat down on low, wait a bit, like half a minute and then gently stir 3 times until it's "scrambled" turn of the heat, remove the pan and let it sit. The egg will cook trough because of the heat of the pan until just cooked trough. This way you get the perfect eggs!!
In a different pan you heat up your tortilla and then you add the avocado and a bit of the eggs, wrap it up and serve with some fresh fruit.

Creamy Delicious Soup

Celeriac soup just doesn't sound sexy, but believe me.. this is an incredibly delicious soup. It serves about 4 persons for lunch or light supper. Except you have a boyfriend like me than it serves 2 ;-)


For the Dutchies, reading my blog, this is the famous vegetable: Knolselderij ;-) 

Ingredients

300g celeriac (about half of the vegetable)
a small sweet potato 
1 big white onion
1 liter vegetable stock
150 ml soy milk
smoked salmon
cream cheese (I used a typical Dutch version: "Heksenkaas")
A couple tablespoons of olive oil

Preheat the oven on 220 degrees Celsius. Chop the celeriac (without skin) in cubes, the white onion in big chunks, drizzle with olive oil a bit salt and pepper and roast in the oven for about 10 minutes. In the meanwhile chop the small sweet potato in cubes (also without the skin). Then heat a big pot on the stove, add a tablespoon of olive oil and add the sweet potato, then the celeriac and onion and stir for a bit until slightly browned. Add the vegetable stock and let the soup cook for about 20 minutes. Get a blender or food processor and blend the soup until done. Add the milk and give it a stir and add some salt and pepper to taste. Then it's almost time to eat! 

Grab a plate and place a handful of slices smoked salmon and a big dot of the cream cheese in the centre, pour in your soup and spoon in! 
Tip: serve with some toasted spelt bread and the remaining cream cheese, delicious!!

A hectic week as a model!

Heey Guys!

I'm incredibly sorry, I have been sooooo busy there was like zero time for blogging.. I went for a trip to Hamburg where I met my new agency MGM models check my Portfolio. And after my meetings I had a date with one of my friends, gorgeous sweetheart Sanny (Bartlema).

The first day in Hamburg I did some serious meal prepping at home (very important if your on the road all day long), I made a simply salad to go (quinoa, smoked chicken, cucumber, avocado and cherry tomato). Healthy, easy to eat on the road and very delicious. Because I had meetings all day I knew there wouldn't be time for a quiet sit-down lunch. And since I'm always hungry.. yep I NEED food prepping ;-) hahaha of course I also had some snacks in my bag as always: some fresh fruit, nuts and this time I also took the NAKED bar with me. It's all natural, has a great taste and it's easy to take with you wherever you go! So some tips you can maybe use when you are planning a trip anytime soon!


After all that was done me and Sanny went food shopping in rainy Germany, definitely time for some comfort food! We bought a bottle of Italian wine (Nero d'Avola, my favourite) and had tapas for dinner! We chose a variation of cheeses, spelt bread, salad, grilled eggplant, olives, corn salad, fresh grapes, fig jam and some nuts. And as a dessert we had my healthy home made brownies (recipe coming soon). Heaven on a little side table!

The next day we went on a very healthy detox after all the cheeses, nuts and wine and had a lot of fresh fruits and veggies. We went to the cinema, "the other woman" with Cameron Diaz and amazing model Kate Upton (still don't understand the hype about her, but yeah she is gorgeous). A really good woman movie, so I would say check it out!
After the cinema we went out for some shopping and bought some amazing sale items in town, scoreeee! After are big shopping succes we ended up having dinner in Dean & David, you may remember the name? I told you about them in one of my older posts Click! We had an amaaaaaaazing carrot, ginger and coconut soup. One of the best soups I ever had.. really.. we thought about it the entire evening haha and shard a huge chicken salad with coconut-satay dressing. Please if you are ever, ever, ever in Germany try out Dean & David.. the smoothies, juices, wraps, panini's, salads and soups.. it's ALL good! =)

After the food we went home and rented some more movies, a very chilling movie day it was! The day after it was time to go home, I needed to continue healthy eating and work out.. seriously.. because I booked an amazing job.. The cover of Men's Health!!!

So excited to book the job, that would be on Tuesday. 2 days left, to be in my very best shape I needed some prepping. For me that means eating healthy 100% of the time: lots of fresh fruit, vegetables, chicken and fish. Not food that will blow you up, but things like beetroot, celery, ginger are very good. And also it's very important do drink a lot of water and green tea, to get rid of all toxics and it cleanses your body well.

The photoshoot was amazing, wonderful people, a great photographer, good looking male models ;-), amazing make up by such a sweet make up artist. Really the entire day was having such a good vibe!! And yes, we also had very nice food! We could choose our own salad or bread, of course all the models took salads since we weren't wearing that much clothes ;-) I chose a chicken salad with avocado, pine nuts and parmesan cheese. But most important, I had soooooo much fun! These are the kind of jobs that make me so happy and feel blessed I'm able to do this work for a living!

Overnight Summer Breakfast Goodness

Goooodmorning!!

Remember I have a big addiction to oats? Well I told you all about the benefits of oats in my post Overnight oats with a twist. This is kind of a similar breakfast recipe, but great in summer. It's my ideal to-go-to breakfast options, because you simply prepare at night just before you go to bed and then you wake up and all you have to do is get this yummy treat out of the fridge, top it off.. get a spoon in.. and enjoy waking up!


Ingredients

for the oats
30 gram oats
1 tbsp lineseeds
nuts (I used 3 almonds, 3 hazelnuts)
a few cranberries or raisins
handful of mixed fresh or frozen berries (I used raspberries and blueberries)
pinch of cinnamon
125ml soy milk
100ml soy yogurt

optional toppings
more nuts, seeds, goji berries, more fruit, beepollen, mulberries take your pick! 

All you have to do is grab a bowl and mix in all the ingredients for the oats, chop the nuts roughly and stir until well combined and then cover the bowl and set a side in the fridge. The berries make the yogurt taste amazing and it creates a great pink colour to your breakfast, a perfect combination! 
The Next morning you add your toppings and off you go!

Asparagus Season!

I looooove asparagus! And so does my Mom, I remember when I was young my grandmother always took a lot of asparagus with her as a gift to my mother when she visited us. The white thick asparagus came from Germany, from the region where my dear grandmother lived. A region that was well known for this lovely vegetable. I wasn't a huge fan of asparagus, but I sure am now. I already whipped up an amazing pasta dish this week with the lovely vegetable, so good! I served gluten free corn pasta, a cream sauce that's actually not creamy and bad for your belly, smoked salmon, asparagus and spinach. And YES, I forgot to make a picture.. again. But it was sooooo damn tasty, so I promise to you all I will make it again soon and post the beautiful dish here on Hungry For Healthy Food.

Back to the asparagus, besides the fact it's damn tasty.. Did you by know that asparagus is full of health benefits of well? It's full of fiber, vitamins A, C, E, K, the complex B-group of vitamins and it's an herbaceous plant as well. A what? Next to avocado, kale and Brussel sprouts, they have a particularly rich source of glutathione - until now still not interesting right? But here it comes - this is a detoxifying compound that helps break down carcinogens and other harmful compounds like free radicals! That's why eating asparagus can actually help protect against and fight certain forms of cancer. Asparagus is also packed with antioxidants, ranking among the top fruits and vegetables for it's ability to neutralize cell-damaging free radicals. This may help slow down the aging process. Woooohoooooo Forever young! So it almost sounds like a superfood to me right? (And then I didn't even mention the fact it's a very low calorie vegetable (oops now I did), 100 gram of fresh spears provide just 20 calories.


Back to the recipe! A wonderful dish with on the bottom fresh lettuce and topped with steamed asparagus (so you won't loose all the vitamins), omega 3 packed salmon and more. So a dish that's rich in good fats, packed with protein and full of Vitamin A (good for your skin), B12, C and E! 

Ingredients

for the Salad
1 organic fresh egg
tablespoon of pine nuts
3 small radishes
some steamed asparagus (about 4)
100 g smoked salmon
Big handful of lettuce
2 small tomatoes

For the dressing
1/4 (60ml) cup fresh orange juice
1/3 (80 ml) cup olive oil
1/4 (60ml) cup white wine vinegar
1 tsp Dijon mustard
salt and pepper to taste

Boil or poach your egg the way you like, I love it when it's half way cooked and the egg yolk is running out of the egg and is drizzling over your salad. Stir fry the nuts in a dry pan until browned and fragrant. Then grab a plate and start off with a big handful of lettuce, top with radishes, asparagus, tomato, smoked salmon in pieces and serve with the egg on top, the pine nuts sprinkled all over and a big spoon of the lovely salad dressing.

Psst: you can store the remaining dressing in a jar in the fridge for a while.
Nutritional information: approx. 360 calories, 19.8 grams of fat, 29.7 grams of protein.

My Dear Amsterdam

Haaay Guys!! 

This week I was back in lovely Amsterdam for 2 days. The very first day I had a gym date, I signed up for an insane workout with Model Workout! And we nailed it! After a million burps (okay Jeroen it were 45) and lots and lots of more excercies it was time to see one of my old friends again, Marianne. I know her since college time, when the economy wasn't that great, she made the choice to move to Amsterdam to find a job over there. And she did, she works as an attorney in a law firm. BUT I have never visited her place in Amsterdam! Shame on me, I know.. but it's just not in my system she lives over there hahhaa.

We (me and Marianne) were both late and I was huuuungry so we decided it would be either dining out or dining in with a take away. And then Sla Amsterdam made the announcement on Facebook they would deliver to her region in Amsterdam as well.. YAY!! Easy peasy! I chose the amaranth chicken salad (my body was craving protein) and it was really delicious! Definitely one of my favourite places in Amsterdam to go to! My salad included rocket, amaranth, mushrooms, sweet potato, tomato, organic chicken and Parmesan cheese. A yummy combination including a very tasty dressing! First time I tried amaranth as well, I liked the taste of it. But I would still prefer quinoa though! ;-)

The next morning I had a casting, my first casting with my new book from Max Models. I signed up with them a bit over a month ago and am really happy with my new mother agent. A mother agent is the one that's taking care of your agenda, agency's abroad etc. The bookers are all really nice and doing a lot of effort, so hopefully I will work a lot with them!!













After my casting I went to Venkel, it's kind of a side kick of Sla. So I was eager to see if it would be just as good. And I have to say, I liked it, but Sla stays my favourite one. The portion was smaller, and I'm a big eater ;-) And the dressing was a bit sourly, I chose the "Lente kriebels" salad with chickpeas, peas, avocado, Parmesan, radish and I chose for a bit extra chicken (protein!) for my muscle recovery. I enjoyed it, I really did.. but too much of the sour dressing! ;-)

Lots of dining out!

Hey Guys!

As you may have noticed, I have not been posting a lot - OOPS! Sorry.. the reason? Mainly because I was working, booking my Holiday and had a lot of lunch and dinner dates with friends and family. Also because I forgot a lot of times to take photo's of my creations.. haha yeah not that smart when you want to post about it ;-) 

Lunch at "Concerthuis" Groningen
One of my friends is a great singer at "Housedieren" she was performing on Queens night- and day so we met up just before so I could help her shopping a bit and we could chat and catch up again. We went to "Concerthuis" a great place for foods & drinks. It's one of my most favourite places the last few weeks. We ordered a roasted butternut squash a "salad" of smoked mackerel, beetroot, fennel and cucumber and a buckwheat salad with roasted eggplant. Lots of food, really, really yummy!!

And look at this yummy food!! That was amazing Spanish tapas, again in Groningen. I haven't seen Sanny in months so we went out for drinks in the sun whole day and finished eating these amazing bites in the evening. We ordered a cheese fondue, patatas braves, chicken in plum sauce, spinach with raisins and pine nuts, lots of red wine haha, orange and avocado salad, beef and I don't know what.. haha lots of food, really yummy!! 



On Sunday I had to work, for lunch we got a three course buffet meal.. damn look at the desserts! How can you resist? 


And then last but not least, a visit to Bagel & Beans. I love their new menu, they have spelt and oat bagels now which I both tried. The oath bagel was a big soggy the spelt was yummy though! I also tried the chicken, avocado salad. DAMN tasty! And of course their juice, unfortunately they didn't had veggie juices today so I took the "all-in fruit juice". It was pure banana, strawberries, orange, banana, pineapple and raspberry. Really delicious! 

Tomorrow another dinner feast! My boyfriend is getting his master degree tomorrow, so proud! That means we have to celebrate well right? So with the entire family we are having a big Indonesian meal feast. Looking forward already ;-)

Easy Peasy Snack

Sometimes it's really hard to think what to eat between meals. The other day I was out for dinner with my boyfriend and I knew it would be a HUGE dinner haha. In that case, you don't want to over eat the rest of the day ;-)
But of course, I got my usual 16 O'Clock snack time hunger so I wanted to whip up a quick snack that's easy, healthy and tasty. I often eat fruit, nuts, rice cakes with peanut butter in between meals but something like this I should do more often. You increase your veggie intake, which is always a good idea!


All I did is wrap some organic chicken breast around some pickles, sliced up a carrot, cucumber and bell pepper and serve with a good dollop of hummus (I also love tzatziki or cottage cheese mixed with 1 tbsp of peanut butter as a dip)

Updated Heavenly Scones


Remember these yummy treats? I sure do! I made them again for the second day of Easter a perfect brunch dish to add to the table. I tweaked the recipe a bit, not completely lactose free anymore because I added "kwark" (for the Dutchies) also known as "Fromage Blanc". Maybe you can substitute it with soy yogurt as well, I haven't tried that one out yet. But because I added "kwark" I didn't had to use ANY fat. So that safes some calories and adds up the protein intake!

Ingredients

250g whole wheat spelt flour
150g oats
25g palm sugar
10g stevia sugar
16g baking powder
1 egg slightly beaten
2 tbsp apple sauce
100g kwark/Fromage Blanc.
50ml soy milk
1 teaspoon vanilla aroma
pinch of salt


Preheat an oven on 200 degrees Celsius. Than mix all the dry ingredients in one bowl and all the wet ingredients in the other. Than it's time to mix the dry and wet ingredients and form a big bowl of the batter. If it's to wet and sticky, add a bit of flower but these amounts should give you exactly the perfect batter and it should be a bit sticky! Divide the batter into 8 balls and bake them for 20 minutes in the oven. Make sure they are done, you can cut one in half and feel it should be completely dry. If it's wet pop them back in to the oven for an extra 5 minutes.

Note: Feel free to add currants, raspberries, chocolate or whatever you like! 

Serve with a dollop ricotta cheese, cottage cheese and (strawberry) jam.. hmmm.. bon appetit!
