Protein Pancakes Baby

Follow my blog with Bloglovin
This recipe is kinda weird, created it when I came home from the gym. I was exhausted and hungry and knew I was going to have so much muscle pain so I wanted to fill up my body whit as much as protein as possible. Eggs are always a good option, but I was in a sweet-tooth mood so eggs weren't really an option. Maybe just a protein smoothie? Nehh.. but what if I combined the two? Yep! Great idea, so I invented the protein pancake!

Ingredients
1 egg
2 egg whites
1 scoop protein powder
Some water

Simply make a pancake batter with the eggs, first whip them up and then add the protein powder. Add water until you have a nice consistency (the same as a regular pancake batter) and then heat up some oil in a pan and bake your pancake. You can make 2 regular ones or 1 huge one ;-) Dust it off with cinnamon and some fresh fruit like banana, strawberries or some home made chocolate spread!

Bon appetit!!

Mouthwatering Coconut, Chocolate & Raspberry mini tartlets

You may have seen these beauty's on my Instagram or Facebook page.. Well today I am finally sharing my delicious recipe with you!

I had a BBQ with my family last weekend and it always involves lots of meat. I'm not a big meat eater but I do love chicken. So we made a batch of healthy burgers, grilled chicken legs, chicken sate, some sausages for the guys and lots more. I always whip up at least 2 different kinds of salads, some veggies, some bread with dips and homemade herbed butter. Because desserts are always unhealthy at my parents place, but everybody loves them I decided it would be nice if I would created something delicious and healthier to the table. Also, because my little niece loooooves cakes.

Ingredients

for the coconut macaroon tart crust
2 2/3 cups unsweetened coconut
3 egg whites (normal or 2 when you have large eggs)
2 tbsp stevia sugar
1/4 tsp vanilla extract

for the raspberry bottom
1 bag of deep frozen raspberries

for the chocolate layer (homemade nutella)
1 cup blanched hazelnuts
1/2 cup coconut milk
1/4 cup palm sugar
1/4 cup unsweetened (raw) cacao powder
1/4 teaspoon vanilla extract
2 tablespoons coconut oil
pinch of sea salt

Now I would suggest to make the homemade nutella first, store it in a jar it always comes in handy ;-) (If your lazy you can substitute for a store bought nutella or chocolate mousse but it will be less healthy).

Step 1: Preheat the oven on 180 degrees and roast the hazelnuts in the oven for 10 minutes (you can also ask your organic nut store to dry roast them so you can skip this step).  If your hazelnuts still have skin, remove them (easy to do when they come out of the oven with a damp cloth and rub the nuts with it).  Add the hazelnuts to the bowl of a food processor and cut up the hazelnuts until it becomes a puree, it will take a few minutes until creamy and you may have to scrape down the sides of the bowl a couple of times. Add the coconut milk, coconut palm sugar, cocoa, vanilla and coconut oil and salt until it's all well mixed and becomes a good paste. Store the homemade nutella in the refrigerator.

Step 2: For the crust: Preheat an oven on 180 degrees Celsius, in a food processor combine the coconut with the egg whites, vanilla and the stevia with the coconut until it's well combined. Lightly coat a muffin or cake pan with some oil and press down the coconut mixture until it makes a well shape as a tart crust. Bake until the coconut turns golden around the edges and is set in the centre, 15 to 20 minutes. Remove from oven and invert the tins immediately on a rack.

Step 3: Let the raspberries thaw a bit and then smash them up in a bowl with a fork. This will be your first layer for the crusts.
Coconut crusts with the smashed raspberries layer
Step 4: Get your (homemade) Nutella out of the fridge and serve a big tablespoon of the chocolate cream in to the tarts. Garnish with some raspberries and there you go. Amazing delicious, healthier, homemade mini tartlets!

My little niece loving my tartlets, cuuuuute!!!!

Nutritional information: Approximately 140 calories a tart.

Eggy Breakfast Wrap

Happpppppy Birthday to my boyfriend. A guy needs a good breakfast right? And because it was his birthday I promised to make him something good. Fresh orange juice, sliced banana, cup of tea, coffee and a yummy eggy breakfast wrap with avocado. Heaven on a plate!

Ingredients

gluten free or whole wheat wraps
avocado in wedges
3 eggs
fresh sliced fruit
salt and pepper
oil
cheese (I use hard old goat cheese)

The most important thing about this breakfast, are the eggs. I love scrambled eggs, I always use 1 egg and 2 whites a dash of soy milk, a bit of grated cheese salt and pepper. Always. But what does a scrambled egg make a good scrambled egg? Well, the thing is with scrambled eggs that you need a specific trick to make them fluffy, gooey, and yummy. For me this means whisking the eggs together with a fork, adding my cheese and spices, than the milk and just whisk until combined. Don't over mix. Than heat up a pan until incredibly hot, add your coconut or olive oil and pour in the eggs. Immediately turn the heat down on low, wait a bit, like half a minute and then gently stir 3 times until it's "scrambled" turn of the heat, remove the pan and let it sit. The egg will cook trough because of the heat of the pan until just cooked trough. This way you get the perfect eggs!!
In a different pan you heat up your tortilla and then you add the avocado and a bit of the eggs, wrap it up and serve with some fresh fruit.

Happy Mornings!

xoxo

My Dear Amsterdam

Haaay Guys!!

This week I was back in lovely Amsterdam for 2 days. The very first day I had a gym date, I signed up for an insane workout with Model Workout! And we nailed it! After a million burps (okay Jeroen it were 45) and lots and lots of more excercies it was time to see one of my old friends again, Marianne. I know her since college time, when the economy wasn't that great, she made the choice to move to Amsterdam to find a job over there. And she did, she works as an attorney in a law firm. BUT I have never visited her place in Amsterdam! Shame on me, I know.. but it's just not in my system she lives over there hahhaa.

Me and the trainer of Model Workout!

We (me and Marianne) were both late and I was huuuungry so we decided it would be either dining out or dining in with a take away. And then Sla Amsterdam made the announcement on Facebook they would deliver to her region in Amsterdam as well.. YAY!! Easy peasy! I chose the amaranth chicken salad (my body was craving protein) and it was really delicious! Definitely one of my favourite places in Amsterdam to go to! My salad included rocket, amaranth, mushrooms, sweet potato, tomato, organic chicken and Parmesan cheese. A yummy combination including a very tasty dressing! First time I tried amaranth as well, I liked the taste of it. But I would still prefer quinoa though! ;-)

The next morning I had a casting, my first casting with my new book from Max Models. I signed up with them a bit over a month ago and am really happy with my new mother agent. A mother agent is the one that's taking care of your agenda, agency's abroad etc. The bookers are all really nice and doing a lot of effort, so hopefully I will work a lot with them!!

After my casting I went to Venkel, it's kind of a side kick of Sla. So I was eager to see if it would be just as good. And I have to say, I liked it, but Sla stays my favourite one. The portion was smaller, and I'm a big eater ;-) And the dressing was a bit sourly, I chose the "Lente kriebels" salad with chickpeas, peas, avocado, Parmesan, radish and I chose for a bit extra chicken (protein!) for my muscle recovery. I enjoyed it, I really did.. but too much of the sour dressing! ;-)

A Pear & Pecan Breakfast Treat

Good morning all,

I finally start to feel better again, yay! I just took my last antibiotic pill so I hope everything is back to normal again now. I was still really nauseous and tired the last few days, but it was probably from the antibiotics the doctor told me. Ah I certainly hope so!
But since I woke up feeling really energetic I can't wait to finally hit the gym again. Especially after having a perfect pre-workout delicious breakfast this morning, ooohhhh my that was finger licking good, I scraped out the entire jar haha. Anyyyyyway guess what kind of recipe I'm posting about today ;-) Hmm.. where I was I? Ah yeah gym.

After the gym I'm going to get me some Probiotics, I always do after having a week of antibiotics. I hate any kind of medications, in particular antibiotics because yeah it makes you better and kills all  the bad bacteria, but it also kills all the good ones that are so important for having a healthy well-functioning body.

I don't have special weekend plans, though. We are cleaning up the house. I live here now for about a year and it's time everything is ready now, you know there are always things you say you will do but you never do. Recognizable? The balcony was one of those things. So yesterday we cleaned up our 2 balconies, so much work but amazing to see the difference, summer I'm ready for you haha! After cleaning all day we had a big Indonesian treat. I get take aways as well and that's kind of difficult with me not eating white pasta, pizza, bread and all. So Indonesian is something we often turn to, it's a lot of work to make your self and it's all authentic and not incredibly unhealthy. Although, the deep-snacks with the meal were not that healthy haha. But hey, I believe in the 80/20 % rule, for me that means I'm trying to eat completely clean and healthy 80% of the time and enjoying a bit too much cheese, wine, nuts or other treats for the rest of the time. That makes it much easier to live 80% of the time completely healthy as well.

SO back to my breakfast. The reason why I'm writing this blog for you. I woke up early and thought of what to make. I have been eating my Sugar free granola (link) for days in a row now, just to good. But it was time to eat something else. I looked in to the fruit basket and noticed a pear that had to be eaten, like now.

So I whipped up a little healthy treat for my boyfriend and I, a perfect Saturday breakfast treat under 300 calories and that takes just 10 minutes for prepping and about 20 minutes for baking while you can hit the shower ;-)

Ingredients
For 1 person

30 gram oats
125 ml almond milk (unsweetened)
1/4 teaspoon baking powder
pinch of see salt
a big pinch of cinnamon
1 tsp vanilla
1 egg white
1 tbsp raisins
1/2 a ripe pear
a few pieces of pecan nuts
1,5 tbsp maple syrup
coconut/oil/butter for greasing

Preheat an oven on 180 degrees Celsius. Lightly grease a small ovenproof bowl. Get a small bowl and combine the oats, milk, baking powder, spices, egg whites and 1 tbsp of maple syrup and combine until you have a very well combined mixture (this is very important otherwise your egg white can separate from the mixture and you are left out with baked egg white ;-)). Now add the pear, chopped in pieces, and the raisins and mix again. Sprinkle some pecans on top and bake this yummy breakfast treat for about 20 minutes.

Nutritional information: 245 calories.
Difficult: Not at all, takes about 30 minutes.

Glutenfree Granola

I wanted to make a variation on my other recipe Most important meal of the day part II (click for the link!), and I guess I have a new addiction. Oefff I invented a serious problem, this granola is so insanely good that you A. won't stop eating it, B. will never ever wanna buy the supermarket versions anymore so you have to make this again and again!!!

With this recipe you will create a huge pot of home made granola/cruesli, about 800 grams so you will have some portions after a bit of baking;-)

The recipe is full of healthy products, gluten free buckwheat, nuts and seeds, coconut oil and a sugar alternative that is low GI. It's 100% pure, 100% good for you and100% delicious. What more do you want?

Oh and time wise, it doesn't take that long. You need about 15 minutes for preparing the granola/cruesli, just about the time your oven is heating up. Than it needs 30 minutes of baking, while you are sitting down :P

Ingredients
300 gram flakes  (I chose 200g buckwheat flakes, 50g quinoa pops, 50g kasha (but you can make it with oat flakes, spelt flakes, only buckwheat or what you like)
100 gram (raw) mixed nuts, roughly chopped
100 gram sunflower/pumpkin seeds
70 ml coconut oil (liquid)
80ml maple syrup or honey
3 egg whites
1 tsp vanilla powder
2 tsp cinnamon

handful of mulberries and goji berries or any kind of dried fruit you wish

Preheat an oven on 180 degrees. Mix all the dry ingredients in a big bowl and add the coconut oil, vanilla, syrup and make sure everything is combined. Now add the 3 egg whites (just raw, you don't have to do anything with it) and stir again until everything is coated. Take a baking tray and spread the mixture evenly out on a baking sheet. Bake for 15 minutes, gently stir so the other side will bake as well for another 15 minutes. Let is completely cool down so it will be mega crunchy and you should have big chunks.

Serve with fresh fruit and (soy) yogurt. Also delicious as a topping on your smoothie, or just as a wonderful snack!

Nutritional information: each 40g portion is approximately 160 calories.

Sunny Spinach Side Salad

Gooodevening all!!

Tonight I felt horrible, yup still sick. After being to the doctor now for the 4th time, they finally find out I have an inflammation.. Something wrong with my kidney so I am getting a full check on Wednesday and antibiotics for now. Yeah you hear that right, antibiotics.. something I reallllly hate to take. Well, I hate to take any kind of medications, even painkillers, but it also made me determined to start getting back on track. No more snacking and cheating, but eating healthy and only healthy until my body is back to normal. Yes I do eat healthy about 60% of the time, but the last few weeks I indulged way too much ;-) Anyway.. this evening I whipped up an amazing dinner, from all fresh ingredients I bought on the farmers market. I roasted a turkey thigh in the oven.. amaaaaazing! I'm so sorry my boyfriend butchered the turkey before I was able to make the picture hahha he loved it! With the turkey I served roasted sweet potato and this loaded superfood salad.

Ingredients

Spinach leaves (washed)
a box of cherry tomatoes
1/2 box of raspberries (fresh)
1 zucchini
old goat cheese (hard)
2 tbsp of pine nuts
half a red onion, chopped
some sun dried tomatoes
raspberry vinaigrette
hazelnut or walnut oil

Get a grill pan on high heat and sprinkle the zucchini with olive oil, salt, pepper and then grill until they have a beautiful brown stripe and are caramelised. Get a big bowl and start with shredding your spinach a bit, so the leaves are not huge. That doesn't eat very pleasant ;-) Now add the tomatoes, you can slice them up however you like. Roast the pine nuts in a dry pan and in the  meanwhile add all the other ingredients in the bowl. Finish with pine nuts and grated goat cheese and serve with the vinaigrette and oil. Amazingly delicious!!

Berry stuffed fluffy oats

Gooooooodmorning!

I already mentioned I love oats and that they are full of health benefits.. (check out my overnight oats post as well). And I love breakfast, huuuuge breakfasts because I always wake up hungry.
So when I want to give myself a treat, it's all grey and rainy outside, I make myself this comfort bowl: A huge bowl of fluffy oats. It's huge, be prepared, but you will happy to see it doesn't contain that much calories. Isn't that a win-win situation? You get protein-good crabs-fruit, all round perfect combination.

Ingredients

30g old fashioned oats
1 egg white
1/2 cup frozen berries
5 fresh strawberries
handful of blueberries
1 tsp agave
1 tsp cinnamon
150ml unsweetened almond milk

Nut sprinkle on top
1 tbsp sliced almond, a few pecan nuts roughly broken, a teaspoon of hemp seeds (or your favourite combination)

Slice your fruit and set it to the side. Bake your nuts mixture in a clean pan until browned a bit (don't add oil). Then it's time to cook your oats in a bit of water until they are a bit softened, then add the almond milk and cook until done. In the meanwhile whip up the egg white in a clean bowl until amazingly fluffy (you can whip the bowl upside down without any of the egg white falling out). Now mix the frozen berries with the oats, sweeten it a bit with stevia if you like and add the cinnamon. Mix until the berries are not frozen anymore and then add the egg white, mix it well and let it cook for about 1 minute so the egg white is not raw anymore. Serve the oats in a big bowl and serve with the fresh fruit and nuts sprinkled on. Bon appetit!

My Modelproof Candy Bonbons

Hey guys!

I am so sorry for not posting for a while.. I have been working a lot and being very sick.. No idea what's wrong but I'm just feeling bad!

I did cook a lot and have a lot of food to share with you! I made this perfect model proof candy, easy to take with you on the road, for a snack with your cappuccino, tea or latte.. or just.. wheneeeeever you want!

It's made out of fresh dates (not the hard, dry ones), almonds, cacao and coconut.. oh and a bit of goji berries.. so basically really delicious and healthy ingredients. The nuts will keep you full, the dates will satisfy your sweet tooth and the raw cacao and coconut is full of health benefits as well. Enough said.. just try it! ;-)

Ingredients
For about 12 balls
12 fresh dates (or medjoul dates), pitted
80g dry roasted almonds
1 tbsp water
1 tsp cinnamon

for on top
1 tbsp goji berries
2 tbsp cacao
4 tbsp shredded coconut (unsweetened)

Mix all the ingredients for the balls in a food processor for about 1 minute. Place the mixture in the fridge for about 10 minutes so it all cools down after processing, this helps forming good balls. Then wet your hands a bit so your easily able to make small balls. Roll the balls in cacao powder, coconut, goji berries or a combination and place them back in the fridge. Get them out before serving, about 10 minutes!

Enjoy your healthy bonbons ;-)

My version on a healthy Kofta

Kofta is a worldwide meat dish, there are variations in Turkey, Middle-East, Greece and I will introduce you my style of Kofta. Kofta literally means meatball, and that doesn't sound that sexy right?

Although I don't eat meat a lot, not because I don't want to, I just don't like it that much. I love fish, every kind of fish and I do eat chicken at least once a week. But my boyfriend looooves meat, so we make compromises, I eat red meat once a week and he eats vegetarian once a week ;-) I do believe it's the most healthiest way as well. Vegetarian meals, 2 times fish (from which one is a fat fish like salmon or mackerel), chicken (most likely twice a week as well) and once a week some red meat.

I already introduced you to the real deal burger, well if you did enjoy that recipe you will definitely like this dish!

Ingredients
For about 4 persons

For the beef mixture
350g organic minced beef
1tbsp almond meal
1 organic egg
1 small tin tomato puree
1tbsp maple syrup
1tbsp cinnamon
1tbsp oregano
1tbsp sweet pepper powder
100g feta cheese (the real feta cheese, not the cheap disgusting cow's milk variation haha)
salt & pepper

The sauce
1 red onion
2 courgettes, diced
2 red bell peppers, diced
2 garlic gloves
1tbsp cinnamon
1tbsp oregano
400g tomatoes diced (tin)
half of the tin of the tomatoes filled with water
salt & pepper

Mix all the ingredients for the beef in a bowl and make small little meat balls, heat some oil in a pan and fried the meatballs until browned. They don't have to be cooked all the way, they will later on in the sauce. When the meatballs have the right colour, get them out of the pan and set aside. In the same pan you will make the sauce. Start frying the onion, than add the garlic, spiced and stir for 2 minutes. Now add the vegetables and fried until everything is browned, now add the tomatoes and the water, salt and pepper and add the vegetables. Cover the pan with a lit and let it simmer away for about 15 minutes. Serve with a fresh cucumber salad with yogurt dressing and cooked quinoa.

Nutritional information approx. 550 calories a person.

My 5 Minutes Chocolate Bomb

Oh....My.....Gosh... I am tooooo excited about this tasty wonderful snack, dessert, chocolate bomb! It takes seriously 5 minutes and what you get is a warm, gooey, sweet, fluffy, chocolate rich, yummy treat.

Yesterday I had an important meeting about my accounting as a model and it stressed me out big time! I'm not that organised, so we soon found out I made some errors.. not a world problem but now I know how to do it better! After that long day with numbers I needed something comforting, a wonderful dinner was on the menu, recipe will follow soon, but a dessert was needed most. I whipped up this amazing dish and you would be crazy NOT to try it out. There is no fat, no sugar, no lactose and no grains or any kind of gluten. So suitable for everyone!

Ingredients

2 heaping tbsp almond meal
2 tbsp cacao
1 tbsp maple syrup
2 egg whites
1 tsp vanilla extract
1 tbsp apple sauce (or you can use a tbsp coconut oil)
pinch of sea salt
1/2 tsp baking powder
4 tbsp almond milk

Now mix up all the ingredients, first the almond meal with the cacao, baking powder, extract, salt and mix to combine, than add the milk, apple sauce and egg whites and give it a good mixture. Place the mixture in a bowl that's deep enough, because this baby will rise like crazy! Place it on full power, 3 minutes in your microwave and done.

Serve like it is, or with crushed pecan nuts, maple syrup and shredded coconut.
Nutritional Information: the entire recipe is about 260 kcal, if you have a bigger dessert appetite ;-) I divided it in 2 when used for a dessert.

Tip: I ate the same for breakfast again, 1/2 the recipe and added yogurt, banana, berries and shredded coconut with some Kasha. A yummy try out as well ;-)

Easy Sunday time: Who needs chips anyway? ;-)

Are you a sucker for chips? Crispy, salty, yeah I know the feeling.. but I have to see my biggest cravings are nuts. And cheese. Yup, looooooooots of cheese and nuts. Although nuts are healthy, =- don't take the roasted, salted ones- I love the roasted and salted ones haha. So as soon as you give me a bowl, I won't and can't stop snacking. This recipe is a perfect substitute for your salty cravings and when you are more of a sweet tooth I will give you a sweety twist on the recipe as well!

And it's an easy Sunday because it's not a lot effort, not a lot of ingredients and getting ready while you are sitting on the couch ;-)

Ingredients
One can chickpeas, white beans or a mix (thoroughly drained, rinsed and dried a bit)
1 tbsp olive oil
1 tsp cumin
1 tsp pepper powder
1 tsp chili powder
1 tsp sea salt

Now turn on the oven on 180 degrees Celsius. Toss the ingredients in a bowl with the beans and chickpeas and make sure everything is well coated, now arrange them on a rack in the middle and of the oven on a baking sheet and bake until crisp, about 35-40 minutes.

and if your the sweet tooth, roast them with cinnamon, vanilla powder, olive oil and a big swirl of agave syrup.

Happy Sunday Everyone!!

Most important meal of the day II

Updated recipe of my favourite breakfast!!

Because I improved my recipe, calculated nutritional information and got a loooot of responses when I posted another breakfast picture on instagram or Facebook I decided to give you an updated version of my favourite meal of the day!

For a big batch of granola

20g of quinoa pops

Dinner party

Salads, always great and look at this beauty!

My brother came for dinner this week, he lives in a student house with a very filthy kitchen. So that means he almost never cooks, eating take aways and pre packed food in the grocery stores is his way of life. I'm trying to let him make healthier options, but he is just not so much in to clean food as well I guess. Well he does love salads, so I made this big beauty for him. Filled up with protein from the smoked chicken, healthy fats of the avocado, of course lots of veggies for vitamins and some beans for extra carbs and protein.

Ingredients
serves 4

450 gram smoked chicken
2 courgettes
2 bell peppers
alfalfa
200g cherry tomato's
a few big hands fresh spinach
1 cucumber
one jar white beans or chickpeas
1,5 avocado
cottage cheese

for the dressing
pomegranate vinegar
olive oil
salt and pepper

Simple heat up a grill pan and cut your courgette and bell peppers roughly. Give them a swirl of olive oil, salt and pepper and grill until browned and done. In the meanwhile roughly chop up your spinach and divide in a huge bowl. Cut the cucumber in fours, just like the cherry tomatoes and divide over the spinach. Next up drain the beans, rinse with water and divide on top. Now it's time for your grilled veggies, chicken in stripes, avocado around for a great look and just some dots of cottage cheese here and there. A bit of alfalfa around and drizzle with the salad dressing. Ready in 20 minutes and tastes amazing.

Serving suggestion: I served the salad with some sliced of spelt bread, my home made spelt crackers and some light herbed cream cheese.

Nutritional information: with salad dressing included approx. 400 calories, 31 gram of protein, 25g of carbohydrates and 20g of fat.

Breakfast today

It all started two night ago. I was on the couch surfing the Internet and whatsapping with friends when I all off a sudden noticed that my Wifi was off. I tried to make a new connection, but no signals were found. I decided to look after it the next morning. Yes, I made a backup off all my files, 2 to be sure actually and than started surfing about the problem on the web. In the meanwhile my Wifi now was grey, not able to press the button at all any more and I started to find out that this was a common problem with Apple. I completely reset the entire phone, wanting to reset my backup later on. And then, error. Yup.. not able to reset. So there you go, thank you apple with your amazing system, alllllll of my files are gone =(

What does this mean for you? Well, all of my recipes have to be photographed.. and I just lost a bunch of pictures so I won't be able to upload as much as I always do. Today I'm going back to the shop and hooooope they will be able to fix without any costs, legally they should. So fingers crossed!

But today I will introduce you: My Yummy Breakfast!

I tried out something new! Overnight "oats" but than with buckwheat instead so it's completely gluten free. Oh my it's filling, delicious and yummy I would say: give it a try, definitely!!

Ingredients

30g buckwheat flakes
drop of vanilla
pinch of cinnamon
100ml almond milk
100ml soy yogurt
15g of seeds (I used linseeds, sunflower and hemp seeds)
handful of frozen berries
fresh mango and berries as topping
optional: kasha and agave syrup

Simply mix all the ingredients, except the toppings (mango and extra berries of course) and let it sit in the fridge by night or at least one hour. The next morning, stir, add you add-ins, I love to use crunchy kasha (hidden under the mango on the picture) and a swirl of agave to give it a healthy sweet touch.

Spoon in, enjoy!! ;-)

Easy Sunday Fritatta

Hey guys, It's Sunday again. That asks for a healthy, easy recipe as I always promise you on Sundays. This time it's not a snack, dessert, breakfast but a wonderful Fritatta for lunch or dinner. It's perfect when you have any vegetables left, in this case roasted vegetables are great. I like to roast a big plate full of vegetables during the week so I have some veggies in my fridge whenever I need it. One of my favourite flavour combination is butternut, sweet potato, red onion and corn. But basically I've done this as well with green peas, broccoli and green beans. Don't have any leftover vegetables? Cook or roast some ;-) But if I can give you a tip, just cook/roast a bit more for dinner than you actually need. You can turn leftovers in the most amazing dishes!

But for now, back to my Easy Sunday Fritatta

Ingredients
A bowl of leftover roasted vegetables
3 whole eggs
3 egg whites
fresh basil
soft goat cheese

Now what? Pre heat an oven on 180 degrees. Mix the eggs until combined and season with salt and pepper. Pour some oil in a stir fry pan (that's suitable for the oven) and fry the vegetables for just a bit, than add the eggs and on top the goat cheese, crumbled feta is also a great substitute when your not a fan off goat cheese). Let it cook for about 5 minutes on medium heat so the bottom of the fritatta is getting browned. Than the oven is going to do the rest of the work for you, again about 5-8 minutes just keep an eye on it! In this time, I suggest you to make a lovely easy side salad. For example some rocket, cucumber, tomatoes and radish and drizzle with balsamic. Serve the fritatta with a slice of bread and the salad.

You can't get it any easier ;-)

Fake Rice

How can rice be fake? That's what you are probably thinking right? Well.. This one is a cheat. Maybe some of you even have heard about this kind of recipes: it's cauliflower rice. Yes after my pizza recipe I now come up with another cauliflower recipe! It's healthy, low calorie, gluten free and versatile.

If you are preparing a high calorie dish you can easily swap the rice for the cauliflower rice for bringing the amount of calories down. This way you get more vitamins in too your body without adding a lot of calories. And it does really taste like rice, not like cauliflower. Give it a try!

You need
A food processor/mixer
onion
cauliflower
oil

Seriously that's all, well OK you need a bit salt as well ;-) You start with a food processor, add the cauliflower (only the top) and pulse until it looks like couscous/rice. Now it's time to put a large frying pan on medium heat. Add a tablespoon of olive oil and cook the onion until translucent, add the cauliflower and fried about 10 minutes. Add a bit of salt and optional a dash of coconut milk.

Stuffed Sweet Potato

I looooove sweet potato's and I wanted to try something out like this for ages.. well.. I'm happy I did! I guess this is one of my best ideas ever to avoid a boring lunch haha

Ingredients
2 big sweet potatoes

for the stuffing
1 tiny tin of white beans
1 onion
1 tiny tin corn
2 fresh tomato's
2 heaping spoons of cottage cheese
left over shrimps - chicken (optional)
cheese for grating on top
salt
1 tsp sweet pepper powder
1/2 tsp cayenne pepper

Bake the sweet potato in the oven on 200 degrees for about 45-60 minutes, until completely soft. While the sweet potatoes are baking, place a skillet over medium-high heat with some oil. Fried the onion until translucent and add the beans, tomato's and spices bake until slightly browned and taste if it's seasoned well enough than add the cottage cheese, stir and turn off the heat. Remove the sweet potato from the oven and let it cool down for 5 minutes. Cut the sweet potato's in halves and scrape some of the flesh out of the potatoes. Mix it with your stuffing and than put the stuffing back in the potato. If you have left over chicken or shrimps, lay it on top and sprinkle with cheese. Turn back in the oven until the cheese is melted.
Serve with a green salad an the remaining stuffing, enjoy!!

Vegetarian Monday

For me it's really important to eat at least one day completely vegetarian, no meat, no fish. My boyfriend is not all to happy with that, but since I start making wonderful dinners and not mention in advance it's going to be vegetarian he is always happy with my created meals;) So this dish is perfect for those who want to eat vegetarian, without the feeling to miss out on meat.

Meat free Monday's Dinner

Ingredients
for the salad
a bag of lettuce
1 avocado
half a cucumber
2 Roma tomato's
goat cheese
seed mix (pine nuts, pumpkin seeds, sunflower seeds)
1 eggplant in slices
a hand of diced butternut

add: vegetarian burger, my favourite when I don't want to make my own: the Provencal carré. A mix of zucchini, eggplant, goat cheese and herbs.

for the dressing
Pomegranate or raspberry vinegar
good quality olive oil
salt & pepper

Preheat the grill or oven on 225 degrees. Arrange the butternut on a peace of baking paper, slice the eggplant in rounds and place next to the butternut on a baking sheet.  Sprinkle the vegetables with olive oil, salt and pepper and let the eggplants grill for 10 minutes, turn and let them grill for another 5. The butternut needs about 20 minutes. When you get the eggplant oat, replace the space for the burgers. They need about 8 minutes. Make sure to turn them as well. In the time your vegetables are roasting it's time to prepare the rest of the salad. Grab a big salad bowl and mix the vinegar, olive oil salt and pepper in it. On top you can add the lettuce, the avocado in pieces, the cucumber in fours, the tomato in slices and after the vegetables are browned and cooled down a bit you can add the butternut and eggplant as well to the bowl, now it's time to mix it all up. Making your salad this way prevents the salad to get soggy because it combines with the dressing just before serving. Finally, crumble the goat cheese on top, get a big amount on your plate and serve with the vegetarian burger.

Bon Appetit!

World's healthiest pizza

I was craaaaving pizza all week and because we all deserve something special now and then I had to eat pizza. But I chose the healthiest version of pizza ever, with this recipe you can have pizza EVERY week, every day without any guilt! I'll introduce you to my version of the healthiest pizza ever, low carb, gluten free, healthy ánd low calorie. Oh and of course finger licking good!

World's healthiest Pizza

Ingredients

For the crust
half a cauliflower
75 gram cottage cheese
1 egg
1 tsp basil
1 tsp oregano
dash of sea salt and pepper

Tomato sauce
1 can diced tomatoes
1 tin tomato puree
basil
chopped onion
2 garlic gloves

Choose your topping (I chose half a fish half a chicken pizza)
cherry tomatoes
fresh basil
mushrooms
bell pepper
tuna
anchovies
chicken fillet
red onion
grated Parmesan and goat cheese on top

What to do: preheat the oven to 200 degrees Celsius. In a food processor, prepare the cauliflower by pulsing florets until they take on a grainy or grated texture. Put it in a microwave safe bowl and microwave for 7/8 minutes on full power. Wrap it up in the middle of a towel and squeeze all of the moisture out. Place the dry cauliflower into a bowl and add the cottage cheese, egg and spices. Fold the mixture until everything is combined and place the dough on a baking sheet and spread it out until a thin (not to thin) base. Bake the crust for 30 minutes or until lightly browned and firm enough. Then it's time to add your toppings and put the heat on 225 degrees and bake the pizza for 10 more minutes.
